One month in, and things are great!

I ate entirely vegan all January and now I am still doing well going into February. The most challenging things are eating out. There are just not a lot of choices in Mankato. We did go to India Palace last week and besides being able to make things vegan (with an upcharge), they do have a few items that are vegan on the menu. I had Aloo Gobi and Wheat bread along with my favorite, Vegetable Pakora appetizer with Tamarind sauce - so good! Last night, I made myself a Patty Melt and it was fabulous!

I used about 40z of Impossible meat which I separated into 2 thin patties, then sandwiched 1 folded slice of Chao Smoked Gouda cheese in the middle. I fried it in a hot pan with a little vegetable oil, salt & pepper. I put Tabitha Brown Chipotle Lime sauce on sour dough bread along with lettuce and ketchup.
