Vegan at 59! Today is my Birthday :)

I am excited to be checking in at just over 2 weeks of my first totally vegan January. I have to say I am feeling absolutely amazing! To celebrate, I am being treated and treating myself today in every way. I started my day sleeping in. Yep, me. I rarely sleep in, but because it is RAINING in Minnesota in January it was dark enough that I could actually kind of sleep in until 8am. My sister Holly was the first to text me birthday wishes at 6:44am. Both of our dogs joined after 7am sometime, so not really sleeping, but taking the time to be lazy and relax under the warm covers felt SO good.
I was happy to join Joel for his morning coffee at The Fillin' Station where I had my usual favorite jasmine green tea. My 10th grade English teacher, Rich O'Brien, was there and sang me an English teacher themed Happy Birthday song that included some mention of noun and verb use. We discussed that he turns 90 in May.
Joel took me to Pub 500 for lunch so I could have their Never Mooed vegan burger and sweet potato fries. I may have eaten a few fries before I took this picture ;) This is one of just a few amazing vegan offerings they have. Their vegan
Black Bean Bowl is another favorite of mine if I am not in a burger mood. I treated myself and ordered their Pear Basil Gin specialty drink since I wasn't driving.
After lunch, I was on a mission to find warm vegan winter boots. If you didn't know, locally owned C&S Supply has a large selection of all kinds of boots. My next door neighbor and manager Megan, was helpful in helping me find the perfect pair. I purchased these Kamik -20 vegan boots. They are very comfortable, but also have a sleek look, are waterproof and are not too clunky. I can't wait to try them out today. *I wore them out tonight - super warm! So happy to have warm and dry feet :D
I had SO many birthday wishes today and I am feeling really blessed. It has been a great start to 2023 :)
