Sleepy Corn Dogs

My daughter thought it looked like the hotdogs were sleeping or floating in the batter, and as it is SO easy to make on a sleepy weekend morning, we thought the name fit well.

Sleepy Corn Dogs Heat oven to 400 & Spray pans with nonstick spray

Mix the dry ingredients - 1 1/4 cups Bob’s Red Mill Gluten Free Baking Flour *Gluten Free Flour will make a more dense loaf than regular gluten flour 1 cup yellow corn meal flour 2/3 cup raw organic sugar 1 teaspoon salt 1 teaspoon baking soda
Next, stir in wet ingredients -
1 1/4 cup unsweetened (almond, oat or soy) milk
1/3 cup simple oil - olive or canola oil
Pour into prepared pan(s)
Place Vegan Smart Dog Hot Dogs in batter in the pans. It is okay if they float or sleep near the top, but don’t worry if they sink into the batter. I cut them in half and then half again to fit in our small pans.

Bake until a toothpick inserted into the center comes out clean. Edges will be slightly brown.
Time will be longer for bigger pans, shorter for smaller pans.
My mini loaves took just 12 minutes. An 8x8 pan will be closer to 20 or 25 minutes.
Serve with your favorite vegan butter and syrup. We tried it with maple, agave and caramel and loved them all :)
