Banana Bread Cookies or Loaves

A versatile Banana Bread recipe that can also be made gluten free.


Just like my grandma Winnie's cookies - veganized!

I loved my grandma Winnie's banana cookies and had searched for a recipe that was like hers that I could veganize for busy Saturdays at our tea shop. The great thing about the recipe is that you can make it as a cookie or bread and by swapping out the flour, it can be gluten free, so a treat for everyone!



Banana Bread Cookies - Ingredients Needed

3 medium bananas ¼ cup flax – mix with water or milk add and mix until all is wet and let sit 1 tsp baking soda

1 cup sugar ½ cup/stick of your favorite butter (room temperature is best) 2 cups flour - any kind, even gluten free *Note - if using GF flour, the cookies will be thinner and spread out thin when baking ½ tsp nutmeg (if desired) ½ tsp cloves (if desired) ½ tsp cinnamon (use more if you do not use cloves or nutmeg)

½ tsp vanilla (if desired) Vegetable spray for loaf pans *Extras – Sugar & Cinnamon to sprinkle on top before baking Mix in ½ cup walnuts, pecans, dark chocolate chips, or any dried fruit

Directions

Heat oven to 375F Smash bananas with a fork, then mix in baking soda & let sit a minute Stir in sugar, then spices and butter, then flax and flour until everything is wet Spoon onto cookie sheet (line with parchment paper for easy cleanup) in desired size of cookies or into loaf pans that have been sprayed with vegetable spray Sprinkle the top with sugar or cinnamon & sugar


Cookies - bake 11-13 minutes until edges and bottom of cookie are slightly brown
Loaves - bake until top is brown (20 minutes for small pans / 45 minutes for larger pans)

You can check loaves with a toothpick for doneness

Eat as you would regularly eat banana bread, with or without butter :)

Store in an airtight container or fridge - Enjoy!
